Paula has around 15 of her own honey bee colonies, some of which she harvests honey. By harvesting in the Spring and early summer, she can be sure that the bees have sufficient honey to feed themselves through the summer and winter months. Paula doesn't feed her bees sugar, use smoke or any chemicals inside or around her hives. The first of the 2025 harvest is from Queen bee, Bella. The aroma is of dandelion. As a fresh crop, the most likely source is apple blossom and dandelion, showing the characteristic traitrs of the colour and consistency of fast crystalisaion of dandelion honey, which is Paula's favourite!
